  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chocolate chips, pecans, or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a bread pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In a separate bowl, beat together brown sugar, granulated sugar, and oil until smooth. Add eggs one at a time, then stir in pumpkin puree and vanilla extract.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Avoid overmixing.
  5. Fold in chocolate chips or nuts if using.
  6. Pour batter into a bread pan.
  7. Bake for 45–50 minutes, or until a toothpick inserted comes out clean.
  8. Let cool slightly before enjoying warm from the oven—or wrap them individually for a cozy grab-and-go breakfast.
