This what I ate in a day to keep myself both mentally and physically fit. These meals are simple and delicious! I wanted to share these meals with you to show how easy and doable it is to eat a well-balanced vegetarian diet. It’s the perfect way to feel happier, and full of energy. My first time trying Korean food was with my good friend Ray. One of the restaurants that we would often visit was Huapei. A little hole in the wall restaurant located near Mt. Cedar and Mt. Hope in Lansing, MI. My favorite dish was their Huapei Chicken. The flavor was a mix of sweet and spicy. It was unique and I had never had anything close to it at any other restaurants. I no longer live in Michigan and I’m now a vegetarian. I still speak with my friend Ray occasional and we reminisce about the time we spent together and all the delicious food we had. After one of our conversations, I wanted to try to recreate the Huapei Chicken but make it vegetarian.
There is nothing better than a warm bowl of soup after a long cold, dreary winter day. Not that bland stuff that comes from a can but, a hearty homemade soup. This spicy vegan southwestern soup is just that a hearty, easy to make homemade soup to enjoy during those cold winter nights. I have been making this soup at least once a week for the last couple of months because of how unusually cold this winter has been. On days when I have to leave my warm home to run errands, I look forward to returning home to enjoy a warm bowl of soup.

They give you just the right amount of energy you need to get through the busiest of days.
