This pulled jackfruit mac and cheese combines two comfort foods into a delicious casserole. Creamy vegan macaroni topped with sweet and tangy pulled jackfruit. Even though this pulled jackfruit vegan mac and cheese is a summer superstar. It can be enjoyed at any time of the year. Serve with vegan coleslaw or biscuits. So grab your favorite barbecue sauce. Then whip up a batch of the pulled jackfruit vegan mac and cheese.

Weird Louise Lentil Chili

It’s starting to get cold where I live and because of that, it’s time to bring out the big comfy sweaters and the fall boots. But most importantly cold weather means its time for comfort foods. Especially if your going to be stuck indoors, doesn’t hurt to have a delicious meal. For my family in the fall its become a tradition to enjoy a warm bowl of chili when the temperatures start to drop. I have a few chili recipes that I enjoy in the fall but this vegan lentil chili is my favorite. Mainly because it’s easy and I typically don’t have to go out and buy a bunch of ingredients. So if you want a good, basic vegan chili recipe, then this is it. In the long run, there are no secret ingredients or odd vegetables just simple ingredients that you can find at any local grocery store.

Hello September & Goodbye August

I had an eventful August I got to hang out with my little sister, see one of my favorite bands, and go to Kansas City’s VegFest. My sister typical visits once a year during the summer while she’s off from school. We always have a great time and do a lot of fun stuff together. I’ve been very busy lately with buying a house and work so it was nice to take a break from that. And get out and do something fun with my sister. I was sad to see her go after all the fun we had but, I can’t wait to see her again next summer and show her the new house.

Easy Spicy Grape Tomato Pasta

This dish is a delicious mix of sweet and spicy while being a light dish that you can enjoy for lunch or dinner. It is a quick and easy recipe that only uses a few ingredients from your pantry and refrigerator. By simply swapping out regular white angel hair pasta with whole grain or whole wheat pasta which includes the nutritious layers of the grain that add heart-healthy fiber to your dish. It’s one of my go-to recipes when I’m looking for something easy, healthy, and filling. It’s hearty enough that you can just eat it on its own or be paired with a side salad and garlic bread. So if you’re stumped on what to have for dinner tonight give this Spicy Grape Tomato Pasta a try. In less than 20 minutes you can have a healthy and delicious meal on a busy weeknight.

Chickpeas and Tofu BBQ Sandwiches

It’s summer and you know what that means? Barbecue season and even if you are a vegan or a vegetarian you don’t have to miss out on some delicious barbecue. These super easy chickpeas and tofu BBQ sandwiches and packed full of flavor and smothered in barbecue sauce. The McCormick smokehouse maple seasoning gives it a smokey maple flavor, but not too salty or sweet. It is one of my favorite seasonings and adds a smokey, spicy yet sweet flavor to pretty much anything you want to try it on. I’ve put it on pasta, soups, and potatoes. The next best thing if you don’t have the time to go out and fire up the grill so if you’re in the mood for barbecue give this recipe a try.
