This dish is a delicious mix of sweet and spicy while being a light dish that you can enjoy for lunch or dinner. It is a quick and easy recipe that only uses a few ingredients from your pantry and refrigerator. By simply swapping out regular white angel hair pasta with whole grain or whole wheat pasta which includes the nutritious layers of the grain that add heart-healthy fiber to your dish. It’s one of my go-to recipes when I’m looking for something easy, healthy, and filling. It’s hearty enough that you can just eat it on its own or be paired with a side salad and garlic bread. So if you’re stumped on what to have for dinner tonight give this Spicy Grape Tomato Pasta a try. In less than 20 minutes you can have a healthy and delicious meal on a busy weeknight.

Spicy Grape Tomato Pasta

Ingredients
  • 2 TBSP of Extra Virgin Olive Oil
  • 10 oz Package of Grape Tomatoes
  • 1/2 Sweet Onion Diced
  • 4 Cloves of Garlic Minced
  • 1/2 tsp of Crushed Red Pepper
  • 1 tsp Italian Seasoning
  • Angel Hair Pasta
  • Salt & Pepper to Taste

Directions:
  1. Cook noodles angel hair pasta according to the package. Save 1/3 cup of pasta water and set aside. Next, drain pasta but, do not rinse then set aside.
  2. Add 1 TBSP of extra virgin olive oil to a large pot. Then add crushed red pepper, onions, and garlic to the pot. Then cook until translucent 3 to 5 min.
  3. Add sliced grape tomatoes and add 1 tsp of Italian seasoning and let simmer.
  4. Add pasta water to tomato mixture and salt and pepper to taste.  Mix pasta with tomato mixture and serve. Enjoy!

Recipe Notes:
  • I had a 32 oz box of angel hair pasta and used about a 1/4 of it which was enough for about 4 servings.
  • To make a larger batch just double the ingredients.
  • The pasta water helps blend the tomato mixture and pasta.
  • If someone who doesn’t care for spice reduce or omit the crushed red pepper.
  • You can also mix in fresh basil, grilled chicken, and roasted red bell peppers.
