Easy Curry Rice & Impossible Meatballs

Being back in school means I don’t always have time to get fancy in the kitchen. Sometimes I need a quick and easy meal that I can put together in about 30 minutes. As much as I love experimenting in the kitchen with new ingredients. A mountain of assignments that need completing by their due dates takes priority. There’s always grabbing a bite to eat, but that adds up over time. Also, dining out isn’t always the healthiest. On the days when I need to throw something together quickly one of the recipes I turn to is easy curry rice. When I want to make it a meal I make some impossible meatballs to go with it.

Easy Curry Rice & Impossible Meatballs

Both dishes are easy to cook and make great leftovers. The Impossible Burger is a great vegan substitute for burger meat. These impossible meatballs are juicy and packed full of flavor and if you like a little spice, you can always leave the seeds of the jalapeno. The easy curry rice is packed full of flavor and pairs perfectly with the Impossible meatballs. So, if you’re looking for a quick last-minute meal then give this easy curry rice and Impossible meatballs a try.

Easy Curry Rice

Ingredients: 

  • 2 cups of cooked basmati rice
  • 2 cups of hot water + 2 yellow curry cubes
  • 1 tsp of oil
  • 1/2 onion (diced)
  • 2 cloves of garlic (minced)
  • 1 cup  of garbanzo bean (drained)

Instructions:

  1. In a saucepan, heat oil on medium-high heat, once the oil is hot add onion and garlic and cook until translucent. Then add garbanzo beans, and cooked rice. Stir until well mixed.
  2. Add curry broth, and bring to a boil for about 2-3 minutes. Then increase the heat to medium for about eight to ten minutes or until curry broth is absorbed. Stir frequently to prevent it from sticking.

Impossible Meatballs

Ingredients: 

  • 1 package of Impossible Burger
  • 1/2 a jalapeno (deseeded and minced)
  • 1/4 of an onion (shredded and drained)
  • 2 cloves of garlic (minced)
  • 1 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander

Instructions:

  1. In a large bowl, add Impossible Burger, jalapeno, onion, garlic, salt, pepper, cumin, and ground coriander. Mix until well combined.
  2. Next, take the mixture and form balls with them. Then heat a skillet with about an inch of water, add meatballs, and cover. Cook for about 15 minutes on medium heat or until fully cooked through.

Impossible Meatballs

Notes:

  • Serve with a side salad and a side of tzatziki sauce.
