Wraps are one of my favorite things to have for lunch or as a quick dinner. They’re healthy, budget-friendly, and go great with a bag of chips. And this southwest veggie wrap with cilantro lime dressing is no exception. Filled with black beans, corn, and a cilantro-lime dressing. It’s one of my favorite wraps to make for lunch and the dressing goes great taco salads. So if you’re looking to try something new that’s simple to make, then give this southwest veggie wrap with cilantro lime dressing a try.

Southwest Veggie Wrap
Ingredients
Cilantro Lime Dressing
- Jalapeno, de-ribbed, and de-seeded
- 1 Avocado
- 1/2 -1 cup of chopped cilantro
- 1 clove of garlic
- juice of 1 large lime or 3-4 small lines
- 1/4 cup of olive oil
- 1/2 teaspoon of sea salt
Instructions:
- Combine the cilantro, jalapeno, lime juice, avocado, garlic, oil, and salt to a blender or food processor. Pulse 3-4 times (or until ingredients are combined).
- Then give it a taste and add more salt or lime juice if needed. Set the dressing aside and prepare the ingredients for your wrap.
Southwest Veggie Wrap
Ingredients
- Flour tortilla
- A can of black beans, rinsed
- A cup of frozen corn, defrosted
- 1/2 bell pepper, diced
- 1/2 tomato, diced
- A handful of chopped lettuce
Instructions:
- Add the black beans, corn, bell pepper, and tomatoes to a bowl. Then mix all the ingredients together until combined and set aside.
- Next, take a tortilla and spread some of the cilantro-lime dressing to the center of the tortilla. Then top with a few spoonfuls of your black bean mixture.
- Lastly, wrap up your tortilla like you would a burrito and enclose the filling. And enjoy!
Notes:
- For a bit of heat, add in some red pepper flakes to the dressing.
- Mix-in ideas: tortilla strips, cheese, diced red onions, and Spanish rice.
- For a quick side salad. Add some extra lettuce, the black bean mixture, and top with some of the cilantro-lime dressing.

Thank you! Breakfast is the meal I usually skip, so when lunchtime rolls around I’m starving. I prefer tart dressing too, so my go-to dressings are vignettes. But it’s nice to shake things up with something creamy every once and a while.

My daughter and I just made these and they were delicious! We added in the red onion and I did reduce the oil to 1/8 cup. It made more of a spread than dressing. Thanks for sharing the recipe.
