It’s summer and you know what that means? Barbecue season and even if you are a vegan or a vegetarian you don’t have to miss out on some delicious barbecue. These super easy chickpeas and tofu BBQ sandwiches and packed full of flavor and smothered in barbecue sauce. The McCormick smokehouse maple seasoning gives it a smokey maple flavor, but not too salty or sweet. It is one of my favorite seasonings and adds a smokey, spicy yet sweet flavor to pretty much anything you want to try it on. I’ve put it on pasta, soups, and potatoes. The next best thing if you don’t have the time to go out and fire up the grill so if you’re in the mood for barbecue give this recipe a try.
Chickpeas and Tofu BBQ Sandwiches
Ingredients

- 1 Package of Firm or Extra Firm Tofu
- 1 Can of Chickpeas (drained & rinsed)
- 1/2 onion (diced)
- 1 Cloves of Garlic (minced)
- 2 TBSP McCormick Smokehouse Maple Seasoning
- 1 TBSP Oil
- 1/2 Cup of BBQ Sauce
- Hamburger Buns
- Pickles for Topping
Instructions
- Heat a large pan and add 1 TBSP of oil to a pan, then add minced garlic and diced onions. Cook until translucent, about 3 minutes on medium heat.
- In a food processor or blender, add your chickpeas and pulse 2 to 3 times. If you don’t have a blender or a food processor in a medium to a large bowl, add your chickpeas and roughly mash with a strong fork or potato masher.
- Pat the tofu dry and crumble with hand or a fork. Add tofu to the pan along with spices. Cook tofu until golden brown. Next, stir in chickpeas and cook for another 7 to 10 minutes.
- Add 1/2 cup BBQ sauce and let simmer for 3-5 minutes on low heat.
- Spoon BBQ mixture onto bun and top with pickles, if desired.
