Chocolate chip Cookie Cake

I don’t have much of a sweet tooth and, haven’t baked anything in a while. I’m getting ready to move and I’m trying to clean out both my fridge and pantry to make the move easier. When I was going through my pantry I stumbled upon my baking supplies and thought these items could easily spill and make a mess. So I decided to use them up and make a sweet treat. One of my favorite treats is a chocolate chip cookie cake with a scoop of ice cream. Chocolate chip cookie cakes are easy to make, which makes them great for last-minute parties. They’re also customizable. You can add different types of chocolate chips or your favorite chocolate candy. It has a chewy center and crispy outside that satisfies my sweet tooth.

Solo Exploring Las Vegas

With a new year comes a new set of goals for the year. One of my goals for the new year was to travel more, so I kicked off the new year with a trip to Las Vegas for the weekend. I’ve never been to Vegas before, but I was looking for cheap flights Vegas popped up. Then I found a round-trip plane ticket for under $200 and decided to spend part of my winter break in Vegas. I stayed for a total of 3 nights in Vegas. I felt it was enough time to explore Vegas and cross some items off my to-do list. My stay in Vegas was fun and I  was able to do everything on my list. So here’s how I spent my time in Vegas.

It is not uncommon to experience burnout as a student. With weekly assignments, exams, and studying various subjects. School and burnout go hand in hand. While burnout is common among college students there are tactics to help manage and reduce burnout. Burnout is a reoccurring feeling throughout the school year, but there are changes students can make to lessen its effects. Before the start of the semester, it’s important to be able to recognize burnout to prevent yourself from experiencing it. Burnout gets better the sooner you address so don’t let it get in the way of you having a good semester.

Life Update

It’s been a while since my last blog post. So I’m here to explain what I’ve been up to and why I haven’t been posting and you all a life update. I haven’t been consistent with blogging or social media because I don’t have a lot of downtime between work and school. If I’m not at work, I’m working on assignments for classes and studying for an exam. It’s winter break now, so I won’t have school to worry about so I can work on blogging and other projects. And hopefully, build back up my bank of posts and get to posting a few times a month again. I want to fill you all on in what’s been going on with me in the last few months and share some things I have planned for the future.

This vegan tortilla soup is hearty, and full of flavor. It can be customized with an array of toppings, and is a quick that can be prepared on the stove or in a slow cooker. It’s bursting with deep, rich flavor from aromatics, warm spices, fire-roasted tomatoes, and green chili. It’ll become a a weeknight favorite because it is easy to make, and can be made in advance and it’ll taste even better the next day.
