Well, June was a rollercoaster filled with ups and downs. I went into the month excited because it was my birthday month and I had big plans for the special day. But that all came crashing down because of work. In last month’s recap, I talked about how I was going to work as a temp employee. The plan was that I’d work there for eight days then have a few weeks before returning back. But since I’m a “good” employee, they kept me on longer. So all the plans and goals I’d made for June went out the window. 

A few years ago I used to live in Georgia where peaches were everywhere. I remember driving down country roads and seeing signs for fresh peaches or peach salsa. While I lived in Georgia, I ate a lot of peaches. I’d often bake with them, put them in smoothies, or add them to my fruit salad. Since moving to Missouri, peaches aren’t something I don’t eat often. But while I was cruising through the produce section, I spotted some peaches on sale. I grabbed a few and tried to think of what I could make with them. I decided to bake a peach cobbler since it’d be easy, but to shake things up, I added some strawberries since they were also on sale. So instead of a regular peach cobbler, I made a vegan strawberry and peach cobbler instead.

There are lots of compelling reasons for why we should eat healthily. It’s fundamental to our overall well-being, reduces our risk of health issues, and helps us maintain a healthy weight. And that’s only to name a few, with perks like that you’d think would be no problem finding the motivation to eat healthily. However, that’s not the case. There’s stress, temptation, and excessive diet advice out there lurking. Causing us to default to old habits, because we end up focusing on trying to achieve perfection which doesn’t exist. Even though creating healthy eating habits may seem impossible to stick to. It’s still doable, by shifting your focus to creating healthy lifestyle habits over time. That way it becomes a lifestyle and not a fad. So here are a few steps you can take that’ll help you stay motivated to eat healthily.

Sometimes we become overwhelmed with everything swimming around in our brains. We might be anxious worries, or so full of ideas we can’t focus. It’s frustrating and can lead to even more stress. But luckily, there is something you can do to ease your restless mind. By using a method called a brain dump.

Homebaked cookies are way better than store-bought cookies any day. But sometimes you don’t have anyone to share a fresh batch of cookies with, and you end up with way more than you can eat. That’s when small batch recipes come in handy. I love a fresh batch of cookies with a glass of non-dairy milk or non-dairy ice cream as a weekend treat. But there’s no way I can eat over a dozen cookies all by myself. So I often like to bake small batches of cookies so I have just enough to satisfy my sweet tooth. And these vegan brownie cookies are just that. They taste like a brownie, soft, chewy, and go great with a glass of non-dairy milk or ice cream.
